I am too scared to say it because it was 96 the other day in Arizona (almost mid Nov) but I think we're finally approaching cooler temps soon, so soup season is upon us! I love making soup- I feel like it's the ultimate comfort food and something my kids will *usually* eat up super easily with minimal complaints and sometimes even ask for seconds!
 
Here's my recipe for my creamy sausage soup! The whole thing takes under 20 min, including prep, so perfect for a busy night! You will need an Instant Pot for this one. Also a little tip: I always buy generic/off brand ingredients (there are some things I refuse to, like sour cream ;)) but for the most part, no one can tell the difference and it saves me money in my grocery budget/planning, too!
 
 
Ingredients:
1lb mild Italian sausage
1/2 tsp of garlic
2 tbsp olive oil (this is to brown the sausage in the IP, I just eyeball)
1 tbsp garlic powder
1 1/2 tsp of Italian seasoning
1 cup of pureed tomatoes
1 c chicken broth 
1 c heavy cream
3 fresh roma tomatoes, chopped, not finely diced
Salt + pepper for seasoning
8 oz cream cheese (one "brick")
1/4 c parmesan 
 
Brown your sausage on "sauté" in your IP (with the olive oil + garlic) until there's no pink showing. Stir frequently and break it up a bit into larger chunks. Add fresh tomatoes, tomato puree, garlic powder, s + p, Italian seasoning, chicken broth, and cream cheese. Stir to combine. Place lid on your IP, turn to manual high pressure for 5 minutes. Do a quick release immediately and hit cancel to turn off the IP. Add the heavy cream and finally mix in parmesan cheese. Stir all together and enjoy! We top ours with a little extra s + p and parm :)
