Pesto Chicken Bake

This is such a quick dinner! Another mom win. 
Ingredients:
3 boneless skinless chicken breasts
2 tbsp-ish of olive oil (enough to coat pan for chicken)
Salt (eyeball)
Pepper (eyeball)
Italian seasoning (eyeball)
Pesto sauce
3 roma tomatoes
2 1/4 c mozzarella
2 tbsp fresh basil chopped (reserved on side for garnish)
Heat medium frying pan with olive oil and season both sides of chicken. Cook each side for 5-7 min (so there's no pink). Remove from heat and chop into bite size pieces. 
Add chicken to a casserole dish, add in diced tomatoes and 1/4 c of mozzarella cheese, and drizzle in pesto. Incorporate everything together by stirring, making sure you still have the chicken evenly dispersed throughout the dish.
Add remaining mozzarella cheese to top of the casserole dish and cover ingredients entirely (but evenly). Sprinkle Italian seasoning on top of mozzarella, and pop into the oven at 375 degrees for about 20 min. I usually take it out right before 20 min, around the 17-18 min mark. Add the chopped fresh basil and some parmesan cheese to top and serve w/cauliflower mashed potatoes, a veggie, or rice!
