Make sure you use a food processor for this! Here's my tiny but mighty (pink!) one. No nuts added into this pesto! Ingredients: 2 c fresh basil 1/2 c grated parmesan cheese  1/4 c olive oil 2 garlic cloves Eyeball salt + pepper to taste Wash basil, remove stems. Place everything in the food processor (I add the basil first and then kind of layer everything on top). Pulse until you have the thickness/consistency you want.  Great w/pasta (obviously! Pesto Chicken Bake

For my homemade (EASY!) pesto sauce recipe, click here. This is such a quick dinner! Another mom win.  Ingredients: 3 boneless skinless chicken breasts2 tbsp-ish of olive oil (enough to coat pan for chicken)Salt (eyeball)Pepper (eyeball)Italian seasoning (eyeball)Pesto sauce3 roma tomatoes2 1/4 c mozzarella2 tbsp fresh basil chopped (reserved on side for garnish) Heat medium frying pan with olive oil and season both sides of chicken.
